CraftZYM diamond

Thermo-tolerant, fungal beta-glucanase (food grade) for glucan degradation during mashing and in tank beer without affecting foam stability.

Mode of action:
The endoenzyme hydrolyzes 1,4-b-glycosidic bonds in cellulose, laminarin and other glucans which occur especially in barley.

High activity in cold temperature and no side activity on proteins (no influence on head retention).

Dosing recommendation:
150 – 250 mL/t of malt or adjuncts in brewhouse, or 0.5 – 3 mL/hL in cold block (fermentation or maturation).

PH range and temperature:
PH range 4.0 – 5.5, temperature range from 0 – 75 °C.
