Alpha-acetolactate decarboxylase (ALDC - food grade), produced by a genetically engineered microorganism (GMO). For rapid taste harmonisation during maturation of green beer.
Mode of action:
Rapid taste harmonization during green beer ripening by direct conversion of α-acetolactate into acetoin already at fermentation start and during fermentation.
Can be added directly with the pitched yeast.
0.8 – 1.3 mL/hL to fermented wort.
PH range and temperature:
PH range 3.5 – 6.0, temperature range from 4 – 45 °C.
