Fungal pentosanase/beta-glucanase complex (food grade) for the degradation of filtration-inhibiting colloids during production of top-fermenting beers.
Mode of action:
Degradation of pentosan and glucan for viscosity reduction and improvement of filtration of top-fermented beers (e.g. wheat beer) or beer types with adjuncts like rye, corn, sorghum.
Ideal product for brewhouse yield increase.
150 – 300 mL/t of adjuncts or 2 – 5 mL/100 L during fermentation or maturation.
PH range and temperature:
PH range 2.5 – 6.5, temperature range from 2 – 80 °C.
